How Each One Moves Water

Everything here reduces to one question: how does water get out, and how does air get in? A sprouting seed needs to be damp, not wet, with airflow through the whole seed mass. Every failed batch anyone has grown was a drainage or airflow failure wearing a different costume.

The jar: gravity to a point

A jar drains at a point. You invert it at roughly forty-five degrees in a bowl or stand, and water runs down the glass to the mesh at the mouth. That works when the seed mass is loose enough for water to travel through, and badly when it is not: the layer nearest the mesh drains freely, the layer above it only if water can find a path down. Air enters through the same mesh it drained from — one opening, one direction.

The tray: gravity through a floor

A tray drains across a plane. Seed sits in a thin layer over a perforated floor, so every seed is the same short distance from an exit hole and water leaves everywhere at once instead of funneling to a single point. Air reaches the seed from above across the whole surface. That is better physics, and it is why a tray tolerates a larger, heavier, wetter seed than a jar does.

None of that makes the tray automatically better. It makes the tray forgiving of the mistake a jar punishes hardest — putting in too much seed, which is by a wide margin what new sprouters get wrong.

Capacity, and How Much a Household Eats

A quart jar is the standard, and easy to overestimate. A tablespoon or two of dry small seed fills a quart jar with finished sprouts — seed expands enormously — which lands around a generously filled salad bowl. For one person eating sprouts a few times a week, one jar on a rolling cycle is plenty; for two, a jar running continuously, or two jars offset by a couple of days, covers it.

The wall arrives at three or four people. The instinct then is to pack more seed into the same jar, and that is the move that fails: a jar more than about a third full of dry seed cannot drain through the middle of the mass, and the middle is where slime starts. Which Seeds Suit Which System

Cleaning, Mold and Where Batches Go Wrong

A jar has three parts: jar, ring, mesh. All three are visible, all three go in a dishwasher or under a brush, and the glass lets you see whether the inside is genuinely clean. In both systems the mold story is a drainage story. In a jar it is too much seed and too shallow a tilt. In a tray it is a layer spread too thickly, or a stack left sitting in its own collected water because the base was not emptied. The jar's footprint is a coffee mug in a bowl, and — the part that matters in a small kitchen — it is temporary. When you are not sprouting, the jar goes in a cupboard. A tray system is a permanent block roughly the size of a small appliance, and because breaking it down is a nuisance it tends to stay assembled indefinitely. Succession

Sprouts do not regrow, so a continuous supply means overlapping batches — and this is where the tray earns its keep. A stack runs day-one seed in one tray, day-three in another and ready-to-eat in a third, all rinsed by one pour from the top. The FDA's page on selecting and serving produce safely notes that bacteria can get into sprout seeds through cracks in the shell before the sprouts are grown, are then nearly impossible to wash out, and that the warm, humid conditions used for sprouting are also ideal for bacterial growth — it names Salmonella, Listeria and E. coli. It advises that people more vulnerable to foodborne illness should avoid eating raw or lightly cooked sprouts of any kind, listing onion, alfalfa, clover, radish and mung bean sprouts as examples. That is the factual position, worth knowing rather than worrying about.
