Sprouts and microgreens get listed side by side as if they were interchangeable. They aren't — different equipment, different timelines, different flavor, and, the part most articles skip, meaningfully different food-safety profiles that the US FDA treats very differently.

The distinction, in one sentence each. Sprouts are whole seeds germinated in water inside a jar, in the dark, with no soil and no light, and you eat the entire thing — seed, root and shoot — in roughly three to five days. Sprouts

A sprout is a seed that has just germinated. Rinse a spoonful of seed, put it in a jar with a mesh lid, soak overnight, drain, then rinse and drain twice a day out of direct light. In three to five days the jar is full. No soil, no light, no drainage tray — and you eat the whole organism: seed hull, the little white root, and the pale shoot. Because nothing grows in light, sprouts stay pale and taste mild and crisp with a slight nuttiness. They're the cheapest fresh food you can produce indoors, and the fastest.

Microgreens

A microgreen is a seedling grown properly, just harvested absurdly early. You sow seed densely over a shallow tray of soil, coco coir or a hydroponic mat, keep it dark for a few days to germinate, then move it under light. The seedlings green up and push their first true leaves. At that point — typically day 7 to day 21 depending on variety — you cut the stems with scissors above the growing medium. The seed hull and root stay in the tray and get composted.

The Food-Safety Difference Nobody Explains Properly

Most sprouts-vs-microgreens articles wave this away. We researched it against the primary sources rather than other blogs, so here is what the US agencies actually say.

The FDA's consumer guidance on selecting and serving produce safely states that sprouts served raw or lightly cooked may contain bacteria that cause foodborne illness, and names Salmonella, Listeria and E. coli. It advises that people more vulnerable to foodborne illness should avoid eating raw or lightly cooked sprouts of any kind — the page specifically lists onion, alfalfa, clover, radish and mung bean. The groups it identifies are children, older adults, pregnant women, and people with weakened immune systems (naming transplant recipients and people with HIV/AIDS, cancer or diabetes as examples). Its advice for everyone else: cook sprouts thoroughly to reduce the risk.

The mechanism explains why sprouts specifically, and not fresh produce generally. The CDC puts it plainly: sprouts need warm and humid conditions to grow, and those same conditions are ideal for the growth of Listeria and other harmful germs. The environment you create to germinate a seed is also close to an incubator. The FDA's industry guidance on sprout production says the same technically — the temperature, water activity, pH and nutrients that produce a sprout are also ideal for pathogen growth if any are present — and records 52 reported sprout-associated outbreaks in the US between 1996 and 2020, with at least 2,700 illnesses, 200 hospitalizations and three deaths.

Two things worth being blunt about. First, the CDC states that home-grown sprouts can also have germs, because they need the same conditions to grow — a clean kitchen does not exempt you. Contamination usually arrives on the seed, and germination multiplies it. Second, the CDC notes germs can grow on the inside and outside of sprouts, so washing does not remove all germs. Rinsing is good practice; it is not a fix.

The honest counterpoint: this is a real but not enormous risk. The FDA isn't telling healthy adults never to eat sprouts — it's telling a specific set of higher-risk people to avoid them raw, and telling everyone that cooking removes the concern. Sprouts wilted into a stir-fry sidestep the issue entirely. And buy seed sold and tested for sprouting, not garden seed, which isn't produced to that standard.

Microgreens sit outside this warning, for structural reasons rather than luck — the FDA's advisory is written about sprouts and does not name microgreens. Three things separate them: you cut microgreens above the growing medium, so the seed hull and root — the parts you swallow whole in a sprout — never reach the plate; they grow in cooler, better-ventilated, less saturated conditions than a jar of standing moisture; and they spend that time in light and airflow rather than warm dark humidity. None of which makes them sterile — rinse, refrigerate, use clean trays. But for a household with a toddler, an older parent, someone pregnant or someone immunocompromised, that difference is decisive.

Cost

Sprouts win comfortably. Counter space

A sprouting jar takes about the footprint of a coffee mug, tilted in a bowl, and can live in a cupboard. A microgreen tray is roughly the size of a large book and needs a light a few inches above it — a dedicated shelf or counter corner for two weeks at a stretch.

Light

Sprouts need none, which is why they stay pale. Microgreens need real light after germination or they stretch into leggy stems that flop over. Taste, Texture and Which Seeds Suit Which Method

Flavor is where the two diverge most obviously. Sprouts are mild and watery with a wiry crunch — a texture more than a taste, which is why they work best in something: a sandwich, a wrap, a grain bowl. Microgreens are the opposite. Having grown in light to their first true leaves, they taste like a concentrated version of the mature vegetable — radish properly peppery, sunflower nutty and thick enough to be a salad base rather than a garnish.

The seeds are largely not interchangeable, which trips people up:

  • Best for sprouting: alfalfa (classic, mild), broccoli (the sulforaphane favorite), mung bean (the thick crunchy stir-fry ones), and lentil (fast, hearty, filling). These germinate cleanly in water and produce an edible whole seed.
  • Best for microgreens: sunflower (thick and nutty), pea (sweet shoots, high yield), radish (fast and peppery), and broccoli (mild and productive). These need a medium to push against and light to develop.

Broccoli appears on both lists — genuinely good either way, which makes it a useful seed to own if you want to try both methods without buying twice. Mung and lentil make poor microgreens; sunflower, with its heavy hull, is a bad sprouting choice.

Re-Growing and Succession

Neither crop regrows after harvest. Sprouts are consumed entirely; microgreens are cut at the growing point, so the seedling has no stored energy for a second flush — pea shoots occasionally manage a smaller second cut, but that's the exception.
