Step 5: Days 2–4 — Rinse and Drain, Morning and Night

From here the routine is identical every day until harvest, and takes about thirty seconds:

  1. Fill the jar about halfway with cool water through the mesh lid.
  2. Swirl gently so every seed gets wet and loose hulls float free.
  3. Pour all the water out, then shake and tap until nothing drips.
  4. Return the jar to its 45-degree angle.

Do this twice a day — morning and night. Twelve hours apart is the target; a few hours either side is fine. In a hot apartment, or with mung beans (which generate real heat as they grow), a third rinse midday is cheap insurance.

Keep the jar at normal room temperature, roughly 65–75°F, and out of direct sunlight — a sunny windowsill cooks the jar. Step 6: Optional — Green Them Up Before Harvest

Sprouts grown in a dim jar are pale yellow. For the vivid green of store-bought alfalfa or broccoli sprouts, move the jar into indirect light for the final 4 to 12 hours — a bright counter away from the window, not the sill itself. The leaves develop chlorophyll and the flavor turns slightly fresher and grassier.

Keep rinsing on schedule while they green, and keep them out of direct sun; the goal is light, not heat. This is cosmetic and only worth doing for leafy seeds. Step 7: Harvest on Day 3–5

Sprouts have a window rather than a deadline. Here's what "ready" looks like:

  • Small seeds (alfalfa, clover, broccoli, radish): tails about 1–1½ inches, tiny leaves opening, jar visibly packed.
  • Mung bean: plump white shoots 1–2 inches long — stop while they're still crisp, since longer beans turn fibrous.
  • Lentil: short tails about ½ inch, roughly as long as the lentil itself.

Give the batch a final thorough rinse. For small seeds, fill the jar generously and let the loose brown hulls float to the top, then pour them off; repeat once or twice. Troubleshooting: The Five Things That Go Wrong

Fuzzy white growth — mold or root hairs?

This confuses everyone, and the answer is almost always root hairs. Root hairs are fine, silky white fuzz forming a neat halo directly around the root of each individual sprout. They appear across the whole batch at once, usually day 3 or 4, they largely flatten after a rinse, and they smell fresh. They signal a vigorous batch.

Mold behaves differently. It's grey, blue-green, or dingy off-white rather than bright white. It forms webby patches bridging between multiple sprouts instead of hugging one root. It shows up in one soggy spot — usually the bottom of the jar where water pooled — rather than evenly throughout. It doesn't rinse away. And decisively: it smells musty or sour. If it's mold, discard the batch, wash jar and lid in hot soapy water, and start again with better drainage.

Sour or off smell

A sour, fermented smell means bacteria outcompeted the sprouts, and the cause is nearly always trapped water: an overpacked jar, incomplete draining, a jar left upright, or a missed rinse. Discard it, then use less seed and shake the jar drier next time.

Sliminess

Slippery film is the same problem one stage on, most common with mung beans and other large seeds that generate heat and pack densely. Cut the seed quantity, rinse three times a day, and make sure the jar is genuinely tilted rather than sitting flat in a bowl.

Seeds not sprouting

If little germinates after 48 hours, suspect the seed rather than your technique. Old seed loses viability, and fungicide-treated garden seed often won't sprout at all.
